Here is a fun, kid-friendly Gluten-free recipe for Banana Kale Pancakes as submitted by one of our MIAbites readers, Nicole, who makes these with her 2 year old budding chef daughter, Mackenzie.
1 cup of gluten free all purpose flour
1 cup of cashew milk (or any non dairy milk)
1 tablespoon of ground flaxseed
1/4 teaspoon of salt
1 teaspoon of pure vanilla extract.
2 large ripe mashed bananas.
Finely chopped 3/4 cup of raw kale
2 teaspoons of baking soda
1 tablespoon of coconut oil
Vegan butter or coconut oil to grease pan.
Mash bananas. Mix and sift in dry ingredients. Add wet ingredients and whisk until uniformly mixed together. Heat the pan on the stove to medium low greasing with vegan butter or coconut oil. Pour on about 1/2 cup per pancake. Let it cook for about three minutes on each side. Enjoy!:)
