Saturday Sweets: Summer's Light & Fresh Fruity Desserts

Summer is just around the corner (even though it feels like it’s already here) and it’s got me thinking about refreshing sweets covered in fresh fruit. I’m usually all about everything chocolate, but there’s something brought on by the heat of summer that converts me - just for a bit - to a fruity dessert fiend.

Here are some of my favorite desserts that can be found around town this summer:

 Key Lime Cheesecake, Lightkeepers at Ritz-Carlton Key Biscayne

It’s almost key lime pie but it’s light and fluffy like cheesecake. Pastry Chef Levi Richard has perfected the art of presentation with this dessert. Sure, the Bag of Beignets on the menu is crazy tempting to order every time - but when you’re looking for something light and fresh, the Key Lime Cheesecake is the way to go. It’s decorated with fresh strawberries and meringue. The ocean views and amazing desserts are definitely the best way to celebrate summer. 

Strawberry Pie, The Dutch

Pastry Chef, Josh Gripper, is always a MIAbites favorite and this summer is no different. This season he’s making Fresh Strawberry Pie filled served with candied kumquat and mint ice cream. These are exactly the fresh fruity flavors I’ve been craving lately and Josh does not disappoint! The Dutch is known for their seasonal pies, so I’m always on the lookout for what’s new in their kitchen.

Coco Loco, Pubbelly Sushi

This dessert screams summer time as it’s served inside of half a coconut. The Coco Loco by Pastry Chef Maria Ortanes is filled with coconut sorbet, coconut mousse, graham streusel, toasted coconut, white chocolate blondie chunks, and compressed pineapple. Two bites of this dish and you’re instantly transported on a mental vacation and feeling like you’re laying on the beach on an faraway island.

 Strawberry Religieuse, db Bistro Moderne

db Bistro is all about season menu changes. Fresh for summer we are graced with the presence of their Strawberry Religieuse featuring a mountain of cream puffs and grapefruit marmalade paired with a white chocolate ice cream. This dessert is exactly as decadent as it sounds and is a perfect way to welcome summer!

Gluten Free Vanilla Bean Cheesecake, Steak 954

It’s a bit of a drive, but if you’re headed to Ft. Lauderdale and craving something light and lovely this is the way to go. Steak 954 has your gluten free fix with it’s Vanilla Bean Cheesecake served with seasonal fruit, oat, almond crumble. It’s another one of those “almost too pretty to eat” desserts that always catch my eye. One bite in and you’ll forget that you debated whether or not to destroy it in the first place.
