The Dutch: New Dessert Menu from Chef Josh Gripper


Summer might be halfway gone for most of the country, but here in Miami, we have at least another five months to go before temperatures drop anywhere below 80 degrees. For this reason, it made total sense for the folks at The Dutch to relaunch their summertime dessert menu last week, just in time for, well, Miami’s longest season! 

This new menu comes to you courtesy of Josh Gripper, a Queens-born pastry chef that has been classically trained by no less than Daniel Boulud himself. After a few years mastering the French technique in New York, Gripper brought his skills to The Dutch, where he designed a wildly popular dessert menu focused on American comfort foods.
And speaking about desserts, there’s five new ones to tackle here, so let’s get to them, shall we?

Coconut Pie
Any self-respecting sweet tooth in Miami knows that one of the The Dutch’s main attractions are their pies, and the new coconut cream menu addition does not disappoint. Its genius combination of American, tropical and Southeast Asian flavors makes it the new star of the menu, and the mix of lychee fresno, chili sauce, and banana sorbet and the pistachio and brown sugar cookie crust make it a light and cool option for a hot Miami day.

The Chocolate Souffle
Utterly luscious but not too sweet, this lighter than air pouf of baked batter swirled with hot chocolate sauce is served together with some refreshing mint ice cream, which was good to the last drop. Mind you, I am not usually a fan of anything that resembles frozen toothpaste, but since the ice cream is made in-house with fresh mint from the garden, the result ends up being a lot more natural than the store-bought kind! 

Milk Chocolate & Cherries
This meteorite-shaped dessert embodies Gripper’s motto of building a connection between the look and the taste of the dish. Made with chocolate mousse, lemon cream, caramelized cherries, and topped with merengue spikes and matcha powder, this dish may sound (and look) complex, but rest assured, the result is a delicate and simple one: an intense flavor of cherries with chocolate.  

Strawberry-almond ice cream cake
When Gripper came up with this dish, he was inspired by a Good Humor Bar, but the result is certainly several levels above. This almond and strawberry ice cream cake is as easy on the eye as it is on the mouth, and its cold and smooth texture is nicely contrasted by the crunch of the crumbled Italian amaretti on top.

Churros and Donuts
Last but not least came the churros and donuts, representing the best in American and Latin dessert cuisine. But don’t be fooled by their deep-fried nature, as both the rum creme filled donuts and the crunchy churros are incredibly light, and designed to not weigh you down if you are heading to a beach party after your meal.
