Beaker & Gray and Burlock Coast Come Together in Collaboration for Best Buddies

It’s no secret that collaboration in the kitchen has been trendy for years, and personally, I hope it never goes out of style. I recently attended the 954 in the 305, a collaborative four course dinner experience with Beaker & Gray and Burlock Coast to benefit the Best Buddies of South Florida. The cocktails and the food were spectacular and inspired by the 305 and the 954.

Beaker & Gray has been serving up trendy, out of the box bites in Wynwood since the day their doors open. At the helm of the kitchen, Miami native Chef Brian Nasajon melds unexpected flavors in a warm and welcoming environment.

On the north side of the Miami Dade County / Broward County line, Burlock Coast offers modern coastal fare complete with a cafe market to take treats home with you. The waterfront spot located at the Ritz Carlton Fort Lauderdale, is absolutely a gem of the 954, spearheaded by Chef de Cuisine Gavin Pera.

The evening began with welcome cocktails inspired by the 305 and the 954. Bar Manager of Beaker & Gray, Ben Potts, created a cocktail inspired by the 954, specifically the snowbirds that travel to Fort Lauderdale. The Purple Snowbird features Zacapa 23 Solar rum, purple coconut Orgeat, beat-infused purple pineapple, purple basil. James Camp, Beverage Manager at Burlock Coast, created a cocktail for us inspired by the 305. His Watermelon Rinse included Tanqueray No. 10, watermelon, orange, aquafaba, and chocolate bitters.

The four course meal alternated between Chef Brian and Chef Gavin’s creations. First up, Burlock was at bat with a wahoo crudo with chilis, citrus, kumquats, ginger, and kaffir lime. The fish was incredibly fresh, expertly prepared, with unexpected flavor combinations.

Next up, Beaker & Gray knocked it out of the park with a braised oxtail dish with avocado seafu, charred corn, garlic scape, and potato crunch. This dish contrasted the first course in that the meal began with fresh, light seafood and the second course diverted expectations with a dish that exudes home, comfort, and nostalgia. Chef Gavin of Burlock Coast paid homage to the 305 with a beautiful Palmetto Creek Pork Belly with tabbouleh, green apple, idiazabal, and malbec. The pork was absolute heaven, with middle eastern influences that are unexpected and surprising.

The final course of the meal was by Beaker & Gray, paying homage to Miami’s little cousin The Keys. The Key Lime Crumble included white chocolate, candied ginger, and burnt meringue. The dessert served as the perfect final punctuation to a meal full of shared collaboration between two of the leading restaurants in the 305 and the 954, benefiting the Best Buddies of South Florida.
