Chef Brad Kilgore: Passport to International Food Star

Like the light from a really bright star, Chef Bradley Kilgore is on fire.

We would love to claim him in Miami as a native son, but we must admit we know that he is originally from Kansas City. The city of Chicago got to watch him shine during some of his formative years under Grant Achatz at Alinea (Boka and L2 as well). When he left the Windy City to come to Miami, few knew what we had just gained.

Soon though, his brilliance was difficult to miss at Azul and Jean-George Vongerichten’s J&G Grill. And then it was time for him to shine in a spot of his own. He collaborated with several local chefs for Basel week pop-ups as the finishing touches were being put on Alter.

When the doors opened in early 2015, night after night, diners sat down, dipped their spoons through a soft cooked egg, Gruyere crisp and scallop espuma and sighed.

P.I.G 7 ( Pork Is Good ) returns to Miami November 12

It will be the first weekend after THE ELECTION, and we will all need a serious distraction from however it all ended up.  So it is with a sigh of relief that we can announce that CHEF JEREMIAH BULLFROG PRESENTS HIS 7TH ANNUAL P.I.G. (PORK IS GOOD) on SATURDAY, NOVEMBER 12, 2016.

GET YOUR TICKETS Here on Eventbrite link https://www.eventbrite.com/e/pig-7-pork-is-good-tickets-27560038818

18 Top Chefs, Heritage Breed Pork, Craft Spirits and Beers and Smooth Sounds Under the Miami Sky...and no more politicians!

Celebrity Chef Jeremiah Bullfrog, former owner of gastroPod Miami, presents his seventh annual P.I.G. (Pork Is Good), a daylong celebration of all things pork, taking place Saturday, November 12, 2016 from 3pm-7pm at 150 Northwest 21st Street in Wynwood. For the event, Bullfrog and his cadre of 18 knife-slingers will show off their creativity and skill with Duroc heritage breed porcine from Creekstone Farms, along with craft beers and cocktails with spirits curated by Jen Massolo of The Liquid Projects.

“It’s been seven years since we first roasted a pig for a group of only 50 folks in the backroom of a former American Legion overlooking Biscayne Bay,” says Jeremiah. “Since then we’ve grown to include a multitude of local chefs, artisanal products, craft beer, and some of the most stellar mixologists in town. Although Pork is Good is now 10 times the size, the home grown vibe is still alive. It takes a strong team of supporters to pull these events off, but it is incredibly worth it. Nothing pays dividends quite like hearing our chefs say time and time again that P.I.G. is the event of the year in Miami.”

NYCWFF Recap: I Love Miami Spice Dinner

I find it interesting that ever since moving to New York at the beginning of the month, I have seen more Miami chefs in town than I did when I was still working back home. It’s no surprise, considering our talents are making big strides internationally, showcasing the skills that have finally put us in the culinary map of the country, along the more seasoned metropoli that usually lead on the matter.

However, if there is one thing where New York supersedes Miami, it is with the now multi-city Food Network sponsored Wine and Food Fest, which has been Miami’s gastronomical staple destination event for the past decade. It’s "younger" sister, the NYCWFF, has taken roots in the big city, and, very much like our own, showcases a week filled with celebrity-chef star studded events, including grand tastings, seminars and private dinners with top chefs.

National Oyster Day: Where to get those briny bivalves in Miami

This Friday, August 5th, is National Oyster Day, and Miami is no stranger to these briny bivalve mollusks.  Iced cold oysters are the perfect summer food...high in protein, low in calories, full of zinc and other beneficial minerals, good fat and certainly a better choice for salt cravings than a bag of chips!

There are over 150 varieties of true oysters but actually only 5 species and traditionally they are named after the body of water or bay in which they are grown and are known by a myriad of names such as Wellfleets, Blue Points, Kumamoto and Kuushi.

The flavor varies depending on the type of conditions or Terroir they are grown in; rocky soil, tidal or brackish water, etc. with the Northeast areas of Massachusetts, Rhode Island and Maine providing some of the most delicious and accessible oysters.

In celebration of National Oyster Day, here are some local options to slurp up a half shell (or a couple dozen):

Miami Spicin’ Around the Fontainebleau

August is here, and with that comes time to make your affordable fancy food adventures come to a reality.  During the months of August and September over 200 restaurants throughout Miami participate in Miami Spice, featuring 3 course lunches for $23 and dinners for $39.  It’s one of the best chances we have to get out there and try new hot spots and old favorites.  Many restaurants have rotating menus, allowing for guests to come back multiple trips to experience something different each time.

The Fontainebleau Miami Beach has three restaurants taking part in this food affair and for the sake of our dedicated readers I “volunteered” as a guest to test out the menus at these amazing restaurants. All in ONE night.  It was quite a sacrifice, but I did it for you loyal MIAbites readers.

ScarpettaHakkasan, and Stripsteak by Michael Mina are each home to some very well curated menus that offer guests an affordable option to try some of their best dishes.
