Saturday Sweets: Top 5 Miami Spice Desserts

As I am sure you are well aware, it’s that wonderful time of the year where many Miami restaurants feature Miami Spice menus with 3 course lunches for $23 and dinners for $39.  A perfect chance to get out there and try something new.  And while many times people “skip” dessert, Miami Spice INCLUDES dessert as part of those 3 courses. 

Now, I don’t know about you – but I always determine my Miami Spice dining based on how yummy their dessert looks.  There are many restaurants that have a great starter and entrée but then finish it off with a “selection of sorbets.”  As refreshing as that sounds, I still want a DESSERT.  Gotta satisfy that sweet tooth!  So in honor of my sweet tooth I’ve scoped out five of the most exciting desserts being offered for Miami Spice.

RECIPE: Grilled Oysters from Grand Isle New Orleans

If you were fortunate to attend the Oyster Bash during this past February’s South Beach Wine + Food Festival #SOBEWFF , the grilled oysters from Executive Chef Ryan Haigler of Grand isle Restaurant in New Orleans were one of the most popular stops at the event held at Lure Fishbar.   In "shell-abration" of today's National Oyster Day, here is the buttery, cheesy recipe for these yummy oysters that can be baked or broiled in the oven or better yet, grilled over an open flame.  Plenty of lemon on the side and you will be the hit of any Summer grillin party.

National Oyster Day: Where to get those briny bivalves in Miami

This Friday, August 5th, is National Oyster Day, and Miami is no stranger to these briny bivalve mollusks.  Iced cold oysters are the perfect summer food...high in protein, low in calories, full of zinc and other beneficial minerals, good fat and certainly a better choice for salt cravings than a bag of chips! 

There are over 150 varieties of true oysters but actually only 5 species and traditionally they are named after the body of water or bay in which they are grown and are known by a myriad of names such as Wellfleets, Blue Points, Kumamoto and Kuushi.  

The flavor varies depending on the type of conditions or Terroir they are grown in; rocky soil, tidal or brackish water, etc. with the Northeast areas of Massachusetts, Rhode Island and Maine providing some of the most delicious and accessible oysters.

Saturday Sweets: Sweet Melody Ice Cream

Tomorrow is officially the end of National Ice Cream Month, so naturally Saturday Sweets is going to use this last chance to celebrate again!  This week we are checking out ice cream wholesaler, Sweet Melody Ice Cream and chatting with the mind behind the madness, Mike Romeu

Mike and I spent nearly two hours talking the about inspiration, the ins and outs of ice cream making, how exciting it is to be part of the culinary movement taking place in our amazing city and how fun it would be to venture into collaborating with other Miami chefs – his dream collab: Michael Schwartz! 

Sweet Melody Ice Cream is named after Mike’s adorable 4 year old daughter, Melody. She’s the light of his life and the reason behind everything he does. His ultimate goal is to someday have his own shop with her name on the marquee. During our time together it was easy to see the excitement and passion flowing through him.  He’s proud of what he’s accomplished in such little time – Sweet Melody came out of nowhere in January this year and shows no signs of slowing down.  I’m jumping on this bandwagon and following him wherever he goes.

Here are some of the highlights of our chat:

Tell us a bit of your background and what made you decide to go into ice cream making?

In 2008, my fiancé at the time was a culinary arts student and she was amazing in the kitchen and I was really into it sort of just as a hobby.  I don’t know how but one night we hatched the idea of a Latin inspired ice cream, which has since been done by Azucar, but at the time they did not yet exist and we thought we had this great concept.  We were going to pitch it to Sedano’s and stores like that because her grandmother was Cuban and my grandmother was Cuban.  We had a lot of Cuban background between us.  We had this idea and a hand-crank ice cream maker that we messed around with a little bit. 

We didn’t get too far into it, but some of our first batches weren’t too bad.  Unfortunately, she ended up passing in 2009.  After that I was in mourning for about a year.  Eventually I got back into the bar industry and was there for a long time.  I had almost forgotten about ice cream, but after Melody’s mom and I separated, I turned to retail therapy and bought kitchen gadgets.  One being a pretty good quality ice cream maker and an immersion blender.   Around that time I started working for my friend’s catering company.

August is here, and with that comes time to make your affordable fancy food adventures come to a reality.  During the months of August and September over 200 restaurants throughout Miami participate in Miami Spice, featuring 3 course lunches for $23 and dinners for $39.  It’s one of the best chances we have to get out there and try new hot spots and old favorites.  Many restaurants have rotating menus, allowing for guests to come back multiple trips to experience something different each time.

The Fontainebleau Miami Beach has three restaurants taking part in this food affair and for the sake of our dedicated readers I “volunteered” as a guest to test out the menus at these amazing restaurants. All in ONE night.  It was quite a sacrifice, but I did it for you loyal MIAbites readers.

Havana 1957 opens on Ocean Drive: Abuela Approved

My Abuela is all knowing. I don’t mean in the respectful "she’s old and wise" way; I mean she literally knows EVERYTHING. My family and I refer to her as 1-800-ASK-NANCY because she just knows it all: movie times, new restaurant openings, history, fashion trends, celebrity behavior, and more.

My whole life I’ve loved hearing her stories. She came to Miami in April of 1962 with my grandfather and my one year old mother to start a new life free of communist Cuba. There was a time period when the family was so poor that all they could afford was cornmeal. Abuela developed an allergic reaction in the form of a gnarly rash, but the cornmeal continued and continued.

A lot has changed since the early 60s for my Abuela, but her love of food has never wavered. So, when I was invited as a guest to try the newest location on Ocean Drive of Havana 1957, I knew who my date HAD to be. Wednesday July 27thThe Dutch at W South Beach will wrap up its wildly-successful Summer BBQ Series with a very special Pig Roast Extravaganza celebration. Hosted by The Dutch’s Sous Chef Darren Donovan, the grand finale will feature guest chefs John Gallo & Rene Reyes of Pinch Kitchen and Steve Santana of Taquiza, along with The Dutch’s Chef de Cuisine Adonay Tafur. The festivities will take place on Wednesday, July 27 beginning at 7:00PM in W South Beach’s glamorous backyard, The Grove. Additional offerings will include delectable desserts by Pastry Chef Josh Gripper and refreshing bourbon libations, as well as several limited small batch brews perfect for the summer BBQ season. Tickets to the final feast are $40 per person, excluding tax and service charges. Space is limited, and advanced purchase is recommended. Quattro Gastronomia Italiana Turns Ten

As a Miami native, I tend to stay away from Lincoln Road with the exception of maybe one gorgeous “winter” day a year for epic people watching.  However, my love of Italian food led me there last week as I checked out Quattro Gastronomia as an invited guest for the first time.  After ten years of successful business on Lincoln Road, I figured they must be worth a try.  I’m happy to say it was a chance worth taking.

While there is ample seating outside on Lincoln Road mall, I actually preferred dining inside, as once you walk into the restaurant you almost forget that you are on the busy Miami Beach tourist destination.  The bar is distractingly pretty and the décor is cozy.  As soon as I was sitting – opting for a spot with my back to the front of the restaurant – I felt like I was in a favorite neighborhood spot.  Along with signing a new lease, Quattro also brought on a new chef to help give the menu a bit of a facelift.  Executive Chef Dario Bellofiore was raised in Venice and has plenty of experience and travel under his belt making him the perfect fit for a new era at Quattro.

RECAP: Miami Spice Mashup #1 at Beaker & Gray

This year will mark the 15th anniversary of Miami Spice, organized by Greater Miami Convention & Visitors Bureau (GMCVB), when for two months some of Miami’s best restaurants offer unique three course menus for at a set price of $23 for lunch and $39 for dinner.  What began with a handful of restaurants in Miami Beach and Coral Gables in 2001, now includes 220 restaurants and sponsors such as Citibank and Stella Artois.

In the months leading up to the July 28th launch of Miami Spice 2016, two teaser dinners, one in June and one in July, are offered to highlight upcoming menu items from two chefs, and include the standard three courses from each chef as well as, new to the program this year, bartenders and their cocktails.

BBQ Series returns to The Dutch Miami Beach

Here in Miami, temperatures are rising and some days it feels hotter than the actual sun. While the rest of the world escapes outdoors for meals and events, many of us “Miami-ans” are running indoors to the much welcomed air conditioning. 

This summer, however, I urge any self respecting food lover to check out the 5th Annual BBQ Series happening every Wednesday at The Dutch Miami Beach. Celebrate summer, outdoors or indoors, with some delicious culinary collaborations. Priced at a crazy $40 per person this is a great way to experience some great food from some creative local chefs.

Moscow Mule: 9 Versions Miami Style

 

Featured in this week's New York Times, The Moscow Mule and it's iconic copper mug seem to be popping up everywhere.  This week's Tales of the Cocktail convention in New Orleans, has even declared this, "the year of the Mule".  Here are some mules to try in Miami. 

Legend has it the Moscow Mule was invented in 1941 by John C. Martin and Jack Morgan at the Los Angeles pub Cock ‘n’ Bull when cases of Smirnoff Vodka ( NOT from Russia…but actually distilled in Bethel, Connecticut ) and ginger beer were crowding the basement storage.

Wes Price, the bartender at the time, said he was just trying to clear out the basement.

At the same time, a Russian immigrant named Sophie Berezinski came to California with 2,000 copper mugs she had designed in her father’s copper shop in Russia. She carted them around L.A., trying to sell them “lest her husband toss them in a trash heap.” She found willing buyers at the Cock ‘N’ Bull who wanted something to make their drink stand out. 

The original vodka of choice was US based Smirnoff, a tiny company owned by an almost penniless Russian ex-pat and purchased in 1939 by Cock n Bull owner John Martin where it would become the vodka of choice for a properly made mule for decades.

With that year in mind, 2016 marks the 75th anniversary of the Moscow Mule and Miami is no stranger to the refreshing vodka based drink that is no longer limited to Smirnoff.
