Miami Spice: Toro Toro at The InterContinental Miami

Located in downtown Miami, inside the InterContinental Hotel, Toro Toro is a vibrant Pan-Latin steakhouse by celebrated chef Richard Sandoval, who also has a sister location in Dubai. The decor of this attractive restaurant manages to create a balance between sleek elegance and an energetic, party-like atmosphere. On a Friday night, the dining room buzzes with energy — the DJ spinning dance beats, the stylish bar area filling up with a lively crowd and the open kitchen showcasing chefs at work over therodizio-style grill.

August and September in Miami are made even sweeter by Miami Spice, a citywide dining promotion offering three-course dinner menus for around $60 per person. Toro Toro fully embraces the event, giving diners a chance to sample some of their popular dishes at an excellent value.

We started our evening with cocktails that were as artful as they were delicious. The Mercado Margarita, a passionfruit-infused creation with a frothy, hibiscus-rosemary foam top layer and a subtle jalapeño kick kept each sip interesting. The Negroni Tomahawk, a twist on the classic, made with Aperol, leaned slightly sweeter but retained the rich, bold character of the original.


From there, our server, Marco, guided us expertly through the Miami Spice selections, beginning with warm, traditional-style yucca flour rolls made with manchego cheese and served with a bright, garlicky tomato compote—addictive little bites that set the tone beautifully.

Appetizers impressed as well: the Lobster Empanada, with its golden, flaky pastry enveloping a rich, cheesy lobster filling, was delicious ,

and the Brisket Birria Bao, which married tender, melt-in-your-mouth beef with traditional Asian-style pillowy bao buns and a spicy, crave-worthy dipping sauce left you wanting for more.

Entrées were equally impressive. The Short Rib Al Carbón was fall-apart tender, paired with two bold sauces — a peanut macha and a zesty salsa verde — balanced by tangy pickled onions to complement the richness of the dish.

The Local Red Snapper Al Mojo,served over pineapple-studded Caribbean rice, highlighted the freshness of the fish in a simple, well executed preparation.

Dessert brought both elegance and drama. The Margarita Key Lime Pie was a creamy, slightly sweeter twist on the Florida classic. But the real showstopper was La Bomba. This interactive, tableside finale features a giant edible chocolate bowl filled with ice cream, a cream cheese mousse, fruit and crumbled cookies that’s theatrically smashed onto a placemat before being drizzled with caramel, chocolate, and vanilla sauces.

Playful, decadent and designed for sharing, it’s a must-try experience.
